OUR GOAL
Bistro Cobojo is the new meeting place in Bucerías. A place where you can find exquisite traditional Mexican dishes with a renewed vision, a warm and friendly atmosphere, delicious drinks, and with its own bakery you will also find a variety of fresh breads and homemade pastries.
Joey Tremblay and Cory Beaujot, owners of Villa Cobojo and visionaries of Bistro Cobojo, sought to create with this project a meeting place for the community with a friendly atmosphere that would promote coexistence between locals and visitors.
At the head of the bistro you will find a charming couple: Jorgecarlos Aragón, one of the emerging chefs of the current Mexican culinary scene, who has been lucky enough to work alongside great chefs such as: Fernando Hernández, René Redzepi, Andoni Aduriz, Oswaldo Oliva and Angel Vazquez. And he is now the resident chef of the place. Jorge has decided to create a menu that reflects memories and experiences lived throughout his journey through Mexico where he worked in several restaurants mentioned in the culinary guide and in the list of San Pellegrino. And his wife, Diana Hernández Manager of the bistro, who also has extensive experience in luxury hotels and hospitality such as One & Only, Rosewood hotels & resorts and Conrad by Hilton. Both intend to unite their trajectory and expertise to create a quality experience bringing different cultures closer to Mexican food, demonstrating that Mexico is great for its human warmth, its attention to the guest but above all for its gastronomic richness, its flavors and great collection of ingredients and techniques.
